I went to the Westlands Organic Market last Sunday with my friend Dee.
From my favorite kind of chocolate (sugar free, 80% Madagascarn or Ghanaian Cacao & 20% edible cocoa butter) to organic honey and amazing crafts, this is a lovely upcoming market for people who are all about all things organic.
One particular seller had this thick, plump, full fat Greek yogurt that tasted like the real deal. Even though I prefer 0% or lower fat Greek yogurt, these are good healthy fats that I could easily adjust into my daily fat macros. I was also happy to find a supplier whose rate was lower than supermarket rates. I bought two tubs with the intentions of using them to play around with different recipes.
I’ve been playing around with recipes to consume my two tubs of Greek yogurt, and one of my favorite was this wonderful concoction I mixed in a ceramic bowl, tossed in the microwave for under 2 minutes and devoured in 30 seconds.
I had a winner!
This recipe makes one big muffin that’s perfect for early morning rushes, when you’ve no time to whip up a detailed breakfast!
Although its completely sugar-free (and by that I mean artificial sugars), the ripe sweet bananas bring a kick of sweetness that is so satisfying. A stick of stevia for the sweet-tooth peeps out there is allowed 🙂
This gluten-free, flourless, fat-free muffin gives you a perfect kick of carbs and protein to get your day started off to an energetic start.
Firm yet moist, with an oozy chocolatey middle and completely healthy and hearty. Yes!
The protein content is however, slightly lower but you can up it with a cup of my protein hot cocoa to go down with this sumptuous muffin!
What You Need:
1/4 cup or 40g oats (double for men. In this case, you’ll double everything else)
1 tsp baking soda
1 stick of stevia
1/4 tsp vanilla or caramel essence
2 small, very ripe sweet bananas (or a quarter banana)
1 heaped tablespoon Greek yogurt
2 egg whites
2 tablespoons of kefir (use skim milk if you have no kefir)
Optional: 1 tbsp Hershey’s sugar-free chocolate syrup
Its So Simple:
Pour the oats into a microwave-safe bowl. Roll the oats on the palm of your hands to loosen them up.
Throw everything except the chocolate syrup in the bowl and whisk till it completely comes together. (an electric hand mixer is faster and better but optional)
Drizzle the chocolate syrup over the mix. (If it the syrup pours in botches, just lightly swirl the top with a spoon)
Toss in the microwave for one minute. Microwave again for 30 seconds. If not ready, toss for another thirty seconds. By this time, it’ll be firm yet moist, and the center will appear half-done.
